Step 1: Cook the shells

Boil the jumbo pasta shells according to the package directions. Pull them out when they’re just al dente — slightly firm. They’ll finish cooking in the oven. Drain and let them cool a bit so you don’t burn your fingers when stuffing.

Step 2: Make the filling

In a large bowl, mix together:

  • Ricotta cheese
  • 3 cups of the shredded mozzarella
  • The squeezed-dry spinach
  • Basil, oregano, salt, pepper, and red pepper flakes

Stir until everything is fully combined. It should look thick, creamy, and just a little green. That’s exactly right.

Step 3: Assemble the dish

Spread about 1 cup of spaghetti sauce across the bottom of your baking dish. Think of it like a bed for the shells — it stops them from sticking and adds flavor from the bottom up.

Pro Tips (That Actually Matter)

Squeeze the spinach. Seriously. Watery spinach = watery filling. I squeeze mine in a clean kitchen towel until it’s almost completely dry. It takes 30 seconds and makes a big difference.

Undercook the shells slightly. Overcooked shells tear when you stuff them. Pull them out a minute or two early. They’ll finish in the oven.

Use a piping bag for the filling. Not required. But if you have one, it makes stuffing faster and much less messy. A zip-lock bag with the corner cut off works just as well.
